Beans and Rice Experiment: Day 4

Read about Day 4 in my 7 day experiment eating Rice and Beans, so I and hundreds of others can take the money we would have spent on groceries and eating out and donate it those less fortunate.

Well I’ve made it to the 4th day! The good news is I’ve been getting 3 servings out of each recipe I’ve made, so I don’t have to cook much.  The bad news is that I’m still eating beans and rice and you can only dress it up so many ways! 

Today was like an oasis because I got to eat normal food. Who would have thought I’d be so excited about 3 meetings that allow me to eat a regular diet? It’s hard to fathom how people eat plain beans and rice day in and day out for years, and only get to eat one meal a day.  When your choice is this or starvation, it’s not really a choice. Of course I’ve heard about people living this way and have seen pictures and videos, but until you experience a small taste of their life, you don’t really get it. Food is obviously only one aspect of their life.  Add the primitive living conditions, extreme poverty, health risks, and other unfathomable conditions and most of us would be ready to go home after one day.

I’m grateful that I get to start my day getting out of a warm soft bed, that I have floors of wood and carpet (rather than dirt), that it’s not raining into my house, that I don’t drink from the same water animals bathe and defecate in. I’m grateful for the beans and rice breakfast casserole I made a few days ago, even if I’d rather be eating something else by now. I’m grateful for my sons who get to attend wonderful schools and live in a great community with so many opportunities. I’m grateful for my extended family, friends, church, and business network. My relationships have been my fuel in life, even more so than the food I savor most days. I have been so richly blessed by awesome people in my life, both personally and professionally.
