Mini Pumpkin Muffins
One mini muffin is just 75 calories. The following recipe yields 24 muffins.
Ingredients:

- 1 ½ cups all purpose flour
- ½ cup light brown sugar, packed
- ¼ cup white sugar
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- 1 ½ teaspoons baking powder
- Pinch of kosher salt
- 1 large egg
- 1 large egg white
- ½ cup canned pumpkin puree
- 2/3 cup nonfat vanilla yogurt
- 3 tablespoons canola oil
- ½ teaspoon vanilla extract
- Nonfat cooking spray

- ½ cup of semi-sweet chocolate chips
Method:
- Preheat oven to 350 degrees
- In mixing bowl combine flour, sugars, baking powder, salt, cinnamon and nutmeg
- In separate bowl mix egg and white, pumpkin, yogurt, oil and vanilla; whisk until combined
- Add wet ingredients to the dry and mix until just blended — do not overmix
- Stir in chocolate chips if desired
- Spray mini muffin pan or line pan with muffin cups
- Fill each cup ¾ quarters of the way up and bake for 25-30 minutes until tops are golden brown and a toothpick comes out clean
