A Festive Treat You Won't Feel Guilty About: 75-Calorie Mini Pumpkin Muffins

Mini Pumpkin Muffins

One mini muffin is just 75 calories. The following recipe yields 24 muffins.

Ingredients:

  • 1 ½ cups all purpose flour
  • ½ cup light brown sugar, packed
  • ¼ cup white sugar
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 ½ teaspoons baking powder
  • Pinch of kosher salt
  • 1 large egg
  • 1 large egg white
  • ½ cup canned pumpkin puree
  • 2/3 cup nonfat vanilla yogurt
  • 3 tablespoons canola oil
  • ½ teaspoon vanilla extract
  • Nonfat cooking spray

  • ½ cup of semi-sweet chocolate chips

 

Method:

  1. Preheat oven to 350 degrees
  2. In mixing bowl combine flour, sugars, baking powder, salt, cinnamon and nutmeg
  3. In separate bowl mix egg and white, pumpkin, yogurt, oil and vanilla; whisk until combined
  4. Add wet ingredients to the dry and mix until just blended — do not overmix
  5. Stir in chocolate chips if desired
  6. Spray mini muffin pan or line pan with muffin cups
  7. Fill each cup ¾ quarters of the way up and bake for 25-30 minutes until tops are golden brown and a toothpick comes out clean
