Cranberries, a superfood, should not only be enjoyed at holiday time, but all year round. At only 45 calories per cup, these tart little rosy berries pack a powerful punch, containing more disease-fighting antioxidants than the best of them. They beat out strawberries, spinach, red grapes, apples, raspberries and cherries – only the blueberry can top the cranberry in antioxidant content, not to mention high levels of Vitamin C and fiber.
Take advantage of fresh cranberries this time of year, but remember frozen cranberries are available year-round in the frozen food aisle.
I especially like this recipe, because it combines tart and sweet, is fast and simple to make AND it is sooooooo DELICIOUS. EnJOY!
2 pounds fresh raw cranberries – sorted, washed and drained
½ cup maple syrup
4 pitted Medjool dates
1 cup fresh orange juice
4 medium apples, julienned
1 t dried orange rind
1 c walnuts, coarsely chopped
With the “S” blade, coarsely process cranberries, maple syrup, dates, OJ, and orange rind.
Remove mixture to a large bowl and add julienned apples and walnuts.
Adjust sweetness to suit your taste.
